Apple and Onion Marmalade

Ingredients

  • 2 Tbsp. extra virgin olive oil
  • 2 1/2 cups onions, julienned (about 2 large or 4 small onions)
  • 12 oz. porter or another dark beer
  • ½ cup water
  • 3 Tbsp. maple syrup
  • 1 tsp. salt
  • 1 tsp. black pepper
  • 3 apples, Honey Crisp or Gala, medium diced
  • 1/4 cup calvados or apple cider

Directions

Heat the oil in a medium sauce pot.  Add onions and cook until caramelized, about 3 minutes.  Deglaze with beer, and then add water, maple syrup, salt and pepper.  Cook over medium low heat until the liquid has reduced by three-fourths, about 35 minutes.  Add apples and calvados and cook for another 10 minutes, stirring occasionally, until reduced.  Adjust seasoning with salt and pepper.
