Buffalo Chicken Meatballs


  • 1 ¼ lb. ground chicken
  • ¾ c. panko breadcrumbs
  • 1 egg
  • 2 green onions, chopped
  • ⅓ c. celery, minced
  • ⅓ c. carrot, minced
  • 1 clove garlic, minced
  • Salt & pepper
  • ⅓ c. hot sauce
  • Blue cheese dressing
  • Celery sticks


Preheat oven to 400°F.

In a large bowl, combine chicken, panko, egg, onion, celery, carrot and garlic. Season to taste with salt and pepper. Mix until combined, and roll into meatballs.

Bake on parchment paper until cooked through - 16 to 18 minutes.
Place meatballs in serving bowl and gently toss with hot sauce. Enjoy with blue cheese dressing and celery.
