Chef Blake Landau, of Newton's Paradise Cafe, shares his recipe for spinach dip.
Spinach Dip
Ingredients:
1 cup mayo
1/2 cup mozzarella
1 cup parmesan
3/4 cup heavy cream
8 oz. blanched fresh spinach
1 T. sriracha
1 clove garlic
1 can artichoke hearts
3/4 Panko bread crumbs
Directions:
Preheat oven to 450 degrees. Prepare boiling water to blanch spinach - salt. Blanch fresh spinach by putting in boiling water for approximately 7 seconds then moving directly to ice water to stop the cooking. Chop the spinach and combine in a bowl with other ingredients. Butter a 2" deep casserole dish and add the mixture. Bake at 450 degrees for approximately 15 minutes or until mixture is golden brown on top.;
Serve with pita chips, Italian bread, or tortilla chips.
