Matt Steigerwald from the Lincoln Cafe in Mount Vernon, shares his recipe for Rhubarb Margarita.
Ingredients:
- 2 cups rhubarb
- 1 cup water
- 3/4 cup sugar
- 3/4 cup lime juice
- 1/2 cup tequila
- Ice
Cook rhubarb, water & sugar for 5 minutes 'til soft. Puree in blender and strain. Chill. Add lime juice amd tequila. Shake with ice. Then pour over ice. Garnish with rhubarb swizzle stick.
