Check out this easy apple and onion marmalade, made with apples, onions, beer, and syrup. Serve alongside pork chops or ham. The marmalade is also great on a grilled cheddar cheese sandwich.
Apple and Onion Marmalade
Ingredients:
2 Tbsp extra virgin olive oil
2 1/2 cups onions, julienned (about 2 large or 4 small onions)
12 oz. porter or another dark beer
½ cup water
3 Tbsp maple syrup
1 tsp salt
1 tsp black pepper
3 apples, Honey Crisp or Gala, medium diced
1/4 cup calvados or apple cider
Directions
Heat the oil in a medium sauce pot. Add onions and cook until caramelized, about 3 minutes. Deglaze with beer, and then add water, maple syrup, salt and pepper. Cook over medium low heat until the liquid has reduced by three-fourths, about 35 minutes. Add apples and calvados and cook for another 10 minutes, stirring occasionally, until reduced. Adjust seasoning with salt and pepper..
