Sautéed Beet Greens & Fresh Beet Salad


  • 1 bunch of whole beets with greens
  • 2 Tablespoons olive oil
  • 2 cloves garlic, minced
  • salt and pepper
  • 1 lemon


  • choice of herbs to taste (mint, basil, thyme)
  • ½ cup chopped tomato
  • ¼ cup walnuts or pecans
  • ¼ cup dried fruit


Wash and peel beets, set aside. Heat 2 tablespoons olive oil in saute pan over medium heat. Add minced garlic and incrementally add beet greens. Carefully pour a few tablespoons water over greens to steam them until they are cooked down. Season with salt and pepper. Add juice of lemon and toss to coat.

Slice raw beets thinly. Toss beets with a bit of olive oil, salt and pepper, and fresh lemon juice. Toss sauteed greens with fresh beets.

Top with additional ingredients of your choice.

Serve and enjoy.
