- 6 pears, peeled , Bosc or other firm
- 1 large pot of coffee
- 1 vanilla bean pod
- 1 Tablespoon sugar
- 1/2 cup pistachios. crushed
- 4oz Maytag blue cheese
- 4 Tablespoons unsalted butter
- 1 cup dark brown sugar packed
- ¾ cup heavy cream
- 1 Tablespoon vanilla extract
- 1 teaspoon kosher salt
Place pears in sauce pan with vanilla bean and sugar, bring to simmer then reduce to low heat. Once poached chill in refrigerator, reserve liquid.
In skillet melt butter then add brown sugar stir occasionally with wooden spoon for approx. 5 min until sandy texture turns more fluid. Then whisk in cream and 1/4 cup poaching coffee liquid. Heat to medium and cook 15min whisk frequently. Let rest and add vanilla and salt to taste
Slice cooled pear and arrange on plate. Drizzle with butterscotch, sprinkle on pistachios and Maytag blue cheese. Serve and enjoy!
