1/4 c. butter, softened

1/3 c. corn syrup

2 tsp. peppermint extract

3-4 c. powdered sugar, divided

gel food coloring

granulated sugar to coat candy balls


Add butter, corn syrup and extract to a mixing bowl. Beat with a hand mixer until smooth. Add 2 cups of powdered sugar and mix well. Add another cup of powdered sugar and beat until worked in.

Knead the dough until sugar is absorbed and dough is smooth, adding more sugar as needed. Divide dough and add food coloring, working it in well.

Shape dough into 3/4 inch balls and roll in granulated sugar. Flatten balls with a fork. Allow candy to sit out at room temperature for a few hours until firm. Cover and store in the refrigerator.
