Bison Chili -- Steak House Style
Serves 6-8 people
Ingredients:
2 each bacon slices, chopped
2 lbs bison steak meat, trimmed and cubed into pieces
1 each large onion, chopped small
2 each green bell peppers, chopped small
1 tbsp garlic, minced
2 cans crushed tomatoes
¼ cup Worcestershire sauce
¼ cup brown sugar
1 can black beans, drained and rinsed
1 can kidney beans, drained and rinsed
1 can pinto beans, drained and rinsed
1/3 cup chili powder
To taste salt and pepper
As needed Beef broth
Method:
Add the bacon to the Dutch oven and cook about ½ way. Add the bison meat and brown on all sides.
Add the garlic, onions, and peppers and sauté for 5-7 minutes.
Add the remaining ingredients and simmer for 35-45 minutes.
Make sure steak meat is tender and chili has thickened. If the chili is thick add some beef broth to thin it down.
Adjust flavor with salt and pepper or your favorite spices.
Serve with crackers, cheddar cheese, diced red onions, sour cream, or jalapenos.
