Morgan's
Pecan Tarts
One of the Halgren
family's holiday traditions.
Shells:
4 oz. cream cheese
1 stick butter
1 ¼ c flour
Process (or use
mixer) until it forms a ball of dough. Pull off a small ball of dough, about
the size of a quarter. Flatten in your hand, then shape into mini-shells. (Morgan
uses a little mini-muffin type pan.)
Fill shells with pecans. Spoon some of the following mixture into shells over
pecans:
1 c brown sugar
1 tsp. vanilla
1 egg
Mixture will seep
down in the pecans, so may have to spoon mixture over the pecans several times.
Bake at 325 degrees for 35 minutes. Remove from mini-tin immediately so they
don't stick. Allow to cool before eating.
