Chef Jon Benedict-Apple Cobbler


Chef Jon Benedict prepares a desert that is impressive yet easy to prepare.

Apple - Cinnamon Cobbler for 2 to 4 people

Apple Filling

Granny smith apples 3 each
Red variety apples 2 each
Orange juice ¼ cup
Sugar ½ cup
Cornstarch 1 tbsp
Cinnamon 2 tsp
Nutmeg pinch

Peel and slice all apples thin. Place in plastic bag with orange juice. Combine all dry ingredients and add to plastic bag. Seal top and mix together well. Fill each ramekin with apples and some of the liquid.

Topping

AP Flour 1 ¼ cups
Sugar 1/4 cup
Baking soda 1 tbsp
Salt pinch
Cinnamon ¼ tsp
Nutmeg pinch
Shortening 2 ½ tbsp
Eggs, 1 each
Milk ¼ cup
Almonds, sliced 1 ½ tbsp

Combine all dry ingredients and mix together. Mix in shortening until it is evenly broken into small pieces. Combine eggs and milk and add to wet ingredients and mix together until combined and workable. Add almonds and mix together evenly. Roll into 1 inch balls. Place 3 balls on top of each ramekin.

To finish

Bake on sheet pan in 350’f oven for about 20 minutes, or until golden brown on top. Remove and top with vanilla ice cream.
