Future Corn Oils May Lower Cholesterol

The Agricultural Research Service is developing 14 new varieties of corn which are high in oleic acid. Scientists say elevated levels of oleic acid gives corn oil stability in flavor... and is also linked to lowering blood cholesterol levels.

These features may be a boon to producers of corn-based cooking oils, who have lost customers to high-oleic alternatives such as olive oil and canola oil.

To get the oleic content in plants, scientists have crossed traditional Corn Belt inbred lines with genes from eastern gamagrass, Tripsacum dactyloides.
