Through plant breeding, the USDA has developed two new varieties of peanuts containing extraordinarily high levels of oleic acid. The acid is a healthful monounsaturated fat that raises levels of good cholesterol and lowers the bad cholesterol that clogs arteries.
One of the new peanut varieties, the Olin, is a type of Spanish peanut often used to make peanut brittle and other candies. The other, the Tamrun OL 01, is a runner peanut, the type used mostly in peanut butter.
