The American diet is shifting away from fruits and vegetables. Since 1990 consumption of vegetables has dropped 16 percent. Fruit consumption has fallen 5 percent.

American consumers are choosing to eat more chicken – up 11 percent. Pasta intake has climbed by 21 percent and pizza is rapidly becoming an American staple. Consumption of it has risen by 37 percent since 1990.
