"Grass Fed" Humans

posted on November 22, 2002

"Grass fed" is not just for cattle anymore.

A Montana State University researcher has developed a high-protein, gluten-free flour milled from a native grass.

The flour is made from the perennial Indian rice grass and can be used in baked goods for those on restricted diets or those with gluten intolerance.

The Indian rice grass is grown mostly in Western States for its seeds, which is predominately sold to the revegetation market.
