"Mmmm, Prune Burgers"

posted on February 1, 2002

Searching for new ways to use surplus fruits and vegetables, the government is trying prune burgers in school lunch programs.

The burgers, a mixture of ground beef and 4-percent prune puree, were taste-tested by 20 children at an inner-city Washington, D.C. school recently.

According to school officials, opinions of the burgers switched to negatives, only after the 5th and 6th graders learned they'd been eating prunes.

Since schools are reluctant to buy unusual surplus items unless they know students will consume them, the USDA plans to hold school taste-tests in seven regions of the nation.
