Detecting the Unseen

posted on August 17, 2001

Detection and protection.

Researchers say they've developed a new detection system that can scan an entire beef carcass for dangerous bacteria.

The joint venture between USDA and a Florida company already has designed and tested a prototype of the system. In a recent trial at Oklahoma State University, the system revealed trace levels of fecal contamination that were invisible to the eye.

USDA has a zero tolerance policy for visible contamination. But officials hope the new system will help make the nation's food supply even safer.
