"Would you like Super-Size Rice Fries with that?"

Government scientists are cooking up a new kind of French Fry for health-conscious consumers craving the perennial fast-food favorite.

Made from rice flour mixtures, rather than potatoes, the new fries are lower in fat than their tuberous cousins.

According to the Agricultural Research Service, rice fries generally absorb 25-to-50 percent less fat than potato fries during the cooking process.

In addition to being hypoallergenic, nutritious and easily digested, the ARS notes that rice stores well and can be fortified with vitamins, minerals, proteins and other nutrients.
