Michael Zamzow/Co-owner, Bull Falls Brewery – Wausau, Wisconsin: “We have a solid core market. We opened up in 2007.  Ginseng’s been around here in Marathon County for quite a while, as you know...International Ginseng Association was meeting here in Wausau. So we were asked to do a ginseng beer. Hsu’s ginseng here, we collaborated with them. They’re our partner on the beer and supplied the ginseng for our beer. But you know what, making beer with ginseng is a challenge because, for the most part, it can taste like saw dust and dirt because it’s a root. It’s not very pleasant.”

Michael Zamzow/Co-owner, Bull Falls Brewery – Wausau, Wisconsin: “So we’ve taken the edge off of the harshness of the root, if you will, and with the peach tea and the Hefeweizen, it’s a very palatable, easy-drinking beer and if you know what ginseng taste like, you can taste it right away. If you’re not familiar with the taste of ginseng, it’s that little bit of an earthy taste in the drink when you drink it.”

Michael Zamzow/Co-owner, Bull Falls Brewery – Wausau, Wisconsin:  “I’m really happy with it. It turned out good. If you have enough ginseng in it, it’s going to make your mouth dry out, which is important for beer-drinking because it always welcomes another swallow.”
